Saint-Barth Paradise would like to honor Morgan Viault, private chef in Saint-Barthélémy, who is here (in photo above) preparing delicious dishes at the Villa Epicure, to delight our guests.

With passion and respect for the terroir, Morgan Viault, a passionate private chef, focuses on culinary elegance combining modernity & tradition. Nostalgic for his grandmother’s generous and gourmet recipes that rocked his childhood, Morgan began studying cooking in Tours, his hometown. His experience at the Chozal farm alongside chefs Jérémie Jobart and Yoann Dagorne taught him new cooking methods, the importance of short circuits and the art of “responsible consumption”. After years of practice in renowned establishments in the metropolis and in Saint-Barthélémy, he decided to take flight and created his own private chef business. Today Morgan has developed his own universe with colorful, healthy, seasonal and balanced creations. He favors low-temperature cooking for the generosity of flavors, the development of aromas and the tenderness of the dishes.

As a lover of spices, he strives to balance the sensations through smoked peppers, ginger, curry and other exotic spices that enhance the harmony of his dishes. On the island, Morgan takes to heart to work with local fishermen to supply himself with mahi mahi and wahoo; fish that he cooks according to different cooking methods as well as the Vitet farm to supply himself with herbs (micro sprouts, mint, basil, chives…). “Take your Chef” is above all an opportunity to express oneself culinarily and to share French know-how while adapting to the different demands and preferences of the clientele. Brunchs, meals, events, “Take your Chef” is at the service of your taste buds to concoct an authentic and elegant menu.

Most of the villas at Saint-Barth Paradise are equipped with semi-professional kitchens and cold rooms, where your manager Emily can invite Morgan Viault to prepare refined meals in the heart of the villa.

Take your Chef will cook for you and your guests during your stay and will concoct for you high quality dishes, based on the chef’s suggestions or on your requests. The composition of the menus will be validated by you. All you have to do is relax, settle down and enjoy. Take your Chef takes care of everything, absolutely everything, from the table setting. Your chef will assemble the brigade you need, depending on the number of guests. Saint-Barth Paradise will also assist you in organizing celebrations, such as birthdays, anniversaries or any other special occasion. The menu, the decoration, the musical atmosphere … everything can be organized according to your wishes.
